Season pot roast with salt, pepper, and garlic powder. Add 1 cup of beef broth to the crockpot. Cook on low for 8-10 hours.
Remove roast from crockpot and shred with 2 forks.
In a large pot, add 2 tablespoons of olive oil. Saute garlic, onions, frozen vegetables, and potatoes for 4-5 minutes.
Add beef broth, shredded beef, tomato soup, and a can of water to the pot. Season to taste.
Bring to a boil. Turn to low and simmer for 20-30 minutes. Enjoy!
