This stuffed peppers recipe is healthy and affordable and the best part it’s super easy to make. To give it a healthier spin, I replaced ground beef with ground turkey and used brown rice & quinoa instead of white rice. I even just grabbed the :90 second microwaveable rice to keep it simple.

It truly is the easiest meal. You throw together an easy filling and spoon it into peppers and bake! 

 

Easy Stuffed Peppers

 

Ingredients:

6-8 bell peppers

1 cup brown rice & quinoa

2 cloves of garlic

1 onion; chopped 

2 cups shredded cheddar cheese 

1 tablespoon of olive oil

1 lb ground turkey 

1 jar marinara sauce 

1 teaspoon of salt, pepper, onion powder, garlic powder, and Italian seasoning

 

Directions: 

  1. Cut the tops off of each pepper, cut out the core and cut in half. 
  2. Place them on a baking sheet, drizzled with olive oil and bake at 350 for 10 minutes.
  3. Cook and season ground turkey. Add onions and garlic to the pan. 
  4. Add marinara sauce, brown rice and 1/2 a cup of shredded cheese.
  5. Fill each pepper with mixture and top with shredded cheese.
  6. Bake at 350 for 20 minutes.
