This Baked Chicken & Rice recipe is not only easy and perfect for a quick weeknight meal, it is also incredibly affordable and hard to mess up which are both major wins for this busy mom! 

The best part is using the boxed Rice-a-Roni to keep it simple and kid-free. You could also easily make it with some vegetables on the side or hide them in there. 

I would love to hear how you like this one because it is definitely on repeat in my home and a crowd pleaser for my picky eater. 

baked chicken and rice

Ingredients: 

4-5 chicken thighs
2 boxes of broccoli & cheese rice-a-roni (or any flavor)
2 tablespoons of olive oil
1 tsp salt, pepper, paprika, cumin, garlic powder, onion powder, italian seasoning
2 tablespoons of butter
5 cups of water
 
Directions: 
1. Preheat oven to 375.
2. Season chicken well and drizzle with olive oil. 
3. Add oil to pan and cook chicken 3 minutes on each side and remove from the pan. 
4. Add butter to the pan and the rice a roni contents.
5. Add water and rice a roni seasoning packet. 
6.  Place chicken back in the pan and bake for 45 minutes.
