No-Bake Energy Bites

These delicious no-bake energy bites are quick to throw together and full of wholesome ingredients!

Servings 20 balls

Ingredients
  

  • 1 cup oatmeal
  • 2/3 cup coconut
  • 1/2 cup peanut butter
  • 1/2 cup flax seed
  • 1/2 cup mini chocolate chips
  • 1/3 cup honey
  • 1 teaspoon vanilla

Instructions
 

  • Stir all ingredients together in a bowl.
  • Let mixture chill for 30 minutes in the refrigerator.
  • Roll into balls with your hands. 1 inch is my ideal.
  • Store in an airtight container.

These No-Bake Energy Bites are perfect for breakfast or a mid-day pick me up. They are filled with wholesome ingredients and so good!
My family loves them, and they are super easy to throw together.
You seriously throw everything in a bowl, mix, roll and refrigerate. If you have the time, you may want to refrigerate them 20 minutes after mixing as this allows everything to set and makes it easier to form balls.
These are great all week long!
This year, I have really been focusing on my health, and what I’m putting into my body on a daily basis. These no-bake energy bites are perfect for keeping me on track as I know the simple “feel good” ingredients that are in each one.
Some fun alterations are changing the nut butter to almond or sunflower. You can also change out the type of chips to butterscotch or white chocolate. However, just be careful of the consistency as it may need more time in the refrigerator depending on the ingredients you use.
