Lately, I’ve really struggled with getting my toddler to eat any vegetables.  Meal time is just exhausting.  I seriously thank God for vitamins because, veggies are just not his friend.

I have found that at this age, the best way to get my kids to eat veggies is by hiding them in different foods.  They will eat anything that does not look like the vegetable itself.  It just has to be baked in something or covered with cheese.

Smoothies are also another way you can get your kids to eat a ton of veggies by mixing it in with a ton of yummy fruits.

I just found out about Garden Lites.  Their products are veggie rich, with vegetables being the first and primary ingredient in all of their products. They are found in your freezer section, usually in the organic isle.

We tried the Chocolate and Blueberry Oat muffins.  I truly could not taste the vegetables, it was so delicious!

We are always trying to find something quick and healthy on school days and this is a perfect alternative to sugary cereal.  It takes me 30 seconds to microwave and I feel good about giving it to my kids.  My oldest son has a nut allergy and I have some dairy sensitivities so we loved that fact that their products are gluten, dairy-free, nut-free.

The best part is my toddler thinks he’s getting a treat while he’s actually eating his veggies.  I literally had to fight him to even get a bite of this muffin.

My days are full from start to finish and I barely get a chance to sit down.  I am constantly wanting to grab something fast on my way out the door or when running the kids around from place to place.  This usually consists of chips or cookies of some kind.  I feel so much better eating a healthy snack, even though my taste buds feel like I’m indulging.

I am always looking for ways to simplify my life so, I can focus more on what really matters.  It’s nice to have some easy and healthy options for our family.

I found my Garden Lites muffins at Giant.  You can find yours in the freezer section of your nearest Publix, Stop & Shop, Giant, Shop-Rite, HEB, Kroger or Costco.  For a $ 1.00 off coupon, click HERE.

My kids LOVE these chocolate muffins! I also have a VERY picky eater, so sneaking veggies in while we work on his pickiness is important. Another favorite of mine is slipping things like spinach, kale, and avocado into our smoothies. I always tell people that smoothies are my picky eater secret weapon! If you get the ratio right they often have no idea it’s in there!
