This stuffed peppers recipe is healthy and affordable and the best part it’s super easy to make. To give it a healthier spin, I replaced ground beef with ground turkey and used brown rice & quinoa instead of white rice. I even just grabbed the :90 second microwaveable rice to keep it simple.
It truly is the easiest meal. You throw together an easy filling and spoon it into peppers and bake!
Easy Stuffed Peppers
Ingredients:
6-8 bell peppers
1 cup brown rice & quinoa
2 cloves of garlic
1 onion; chopped
2 cups shredded cheddar cheese
1 tablespoon of olive oil
1 lb ground turkey
1 jar marinara sauce
1 teaspoon of salt, pepper, onion powder, garlic powder, and Italian seasoning
Directions:
- Cut the tops off of each pepper, cut out the core and cut in half.
- Place them on a baking sheet, drizzled with olive oil and bake at 350 for 10 minutes.
- Cook and season ground turkey. Add onions and garlic to the pan.
- Add marinara sauce, brown rice and 1/2 a cup of shredded cheese.
- Fill each pepper with mixture and top with shredded cheese.
- Bake at 350 for 20 minutes.
