Hey everyone!! I hope this meal plan will help you gain some ideas for some easy and different meals for your family this week.  I write tips on cooking certain items under each meal but, if you ever want an exact recipe just ask in the comment section below. Monday

Basil Chicken in Coconut Curry

**This is an easy Crockpot meal.  This meal consists of : garlic, coconut milk, ginger, cilantro, onion, curry powder and chili powder all mixed together and cooked on low all day.  Serve over rice.  I also get some Naan bread to eat with this meal which just takes it over the top!

Crockpots make meal planning so easy! Every week I use it for at least one meal.

Tuesday

Turkey meatballs & Spaghetti

**These meatballs were simply delicious.  They are made of: bread crumbs, garlic, italian seasoning and egg.  They bake in the oven at 350° for 20 minutes and, then I simmer them in spaghetti sauce for 15 minutes before serving.  Served over angel hair pasta with a side salad.

Wednesday

This night was an easy frozen pizza night.  Always leave room in your meal plans to have an easy night that you do chicken nuggets & french fries or frozen pizza or whatever other easy ideas you have!

Thursday

Pulled Pork

** Pulled Pork is seriously the best in the Crockpot because, the flavors can cook for a long time and the meat becomes incredibly tender.  Add cumin, garlic, brown sugar, salt, pepper, chili powder, a little chicken broth and a hint of cinnamon to the crockpot with a pork butt or shoulder and watch the magic happen! Top with coleslaw for extra deliciousness! This meal was served with rice pilaf.

Friday

Grilled hot dogs & homemade french fries

**In the summer, at least once a week we use our grille to make a quick & easy meal with hot dogs, hamburgers, steak or chicken.  I made homemade french fries (fried in vegetable oil and sprinkled with sea salt) to go with the meal and cut up some apples on the side.

Saturday

Create-my-own dish ( kielbasa, zucchini, squash, onions)

**I love to experiment so tonight I made a dish where I threw a bunch of things in a saucepan that I didn’t want to go to waste from the farmers market.  This included: Kielbasa, zucchini, squash, onions, garlic, salt, pepper, garlic powder, onion powder.  It was great! I served this with biscuits.

Sunday

My day off!! We hit up Moe’s Southwest grille for $1.00 tacos!!

I can’t decide which of these would be my favorite. Even the simple hot dogs and french fries are amazing because ANY time you can make your own homemade fries they are great! We try to match McDonald’s seasoning salt blend on our fries to so the kid eats them lol.

I have a “Freebie” dinner once a week. We all make our own thing and it’s usually something super simple like salad and sandwiches or a frozen pizza.

I always like to read meal plans like yours to get some other ideas. My husband is a coach and not home much during the week for dinner so I need some ideas that work ok for just myself and young kids. I have a pulled pork recipe too!
